The Swarm is also a cocktail with the artichoke bitter Cynar. However, we’re dealing with a drink that is located more on the sweet side, but has a very nice complexity. At first I was very excited to see how the drink would probably taste and to my very great surprise, the final result was very close to the aromas of a grapefruit based drink. This seemed to be not only my personal opinion, because some friends of mine with whom I tried this cocktail for the first time also came to this conclusion. In addition to that, a mixture of full-bodied honey notes and a subtle bitterness complete the overall impression. Reason enough to give this excellent drink a chance!
I found the recipe on Serious Eats and it comes with the US-typical ounce units:
Recipe:
2 oz of warm water
2 oz honey
4 oz white rum
Juice of 1 lemon
1 oz Cynar
Preparation:
Stir warm water and honey in a shaker until the honey has dissolved in the water. Then add the remaining ingredients and shake on ice for approximately 15 seconds. Then strain into a pre-chilled glass.
Glass: Coupette
If you want to you can readjust the amount of honey. It makes sense to use a quality honey, since the taste comes pretty much through.
